Description

Blackstone Steak and Potatoes is a quick, comforting flat-top meal with juicy steak bites, crispy golden potatoes, and a rich garlic butter finish. It is easy enough for a weeknight and impressive enough for guests.


Ingredients

  • 1.5 pounds sirloin steak, cut into 1-inch cubes
  • 1 pound Yukon gold potatoes, diced into half-inch cubes
  • 2 tablespoons olive oil, divided
  • 4 tablespoons butter
  • 4 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 2 teaspoons beef rub, or salt and black pepper
  • 1/2 cup water
  • Fresh chopped parsley for garnish, optional

Instructions

  1. Place the diced potatoes in one bowl and the steak cubes in another bowl.
  2. Drizzle 1 teaspoon of olive oil into each bowl.
  3. Divide the garlic, beef rub, and Italian seasoning between the steak and potatoes.
  4. Toss each bowl well until everything is evenly coated.
  5. Preheat the Blackstone griddle to about 400°F.
  6. Spread the remaining olive oil across the hot griddle surface.
  7. Add the seasoned potatoes in a single layer.
  8. Squirt water over the potatoes and cover with a griddle dome or Blackstone lid.
  9. Steam the potatoes for 4 to 5 minutes.
  10. Toss the potatoes, add more water if needed, cover again, and cook another 4 to 5 minutes.
  11. Repeat one more time until the potatoes are fork-tender.
  12. Add the steak cubes to the griddle once the potatoes are nearly done.
  13. Let the steak sear without moving for 2 to 3 minutes.
  14. Toss the steak and cook another 2 to 3 minutes, or until it reaches your preferred doneness.
  15. Remove the dome from the potatoes.
  16. Drop the butter onto the griddle between the steak and potatoes.
  17. Let the butter melt, then toss everything together until coated in garlic butter.
  18. Remove from the griddle and serve hot with fresh parsley if desired.

Notes

Cut the potatoes and steak into even pieces so everything cooks at the same pace. Do not skip the water and dome step because it helps the potatoes turn tender inside before they crisp up. Let the steak sit on the hot griddle without moving so it gets a proper sear.
