- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 cup dark cocoa powder (like Hershey’s Special Dark)
- 1 pinch of salt
- 2/3 cup semisweet chocolate chips (for melting)
- 1 cup black sanding sugar
- 24 candy-coated sunflower seeds (green or yellow for the “eyes”)
Instructions
- Beat the softened butter and sugar together until light and fluffy.
- Add the egg and vanilla extract, mixing until smooth.
- In a separate bowl, whisk together the flour, dark cocoa powder, and salt.
- Slowly add the dry ingredients to the wet, mixing just until combined.
- Form dough into a flat disc between parchment paper. Chill in the fridge for at least 1 hour.
- Roll dough to ¼ inch thick. Cut cat shapes using a cookie cutter. Chill cutouts for 30 minutes.
- Preheat oven to 350°F (175°C). Bake cookies for 12–15 minutes until edges are firm. Cool on a wire rack.
- Melt chocolate chips in 30-second bursts until smooth.
- Spread melted chocolate on each cookie. Press into black sanding sugar to coat.
- Use melted chocolate to attach candy-coated sunflower seeds as eyes. Pointed ends should face inward.
Notes
Use dark cocoa for the deep silhouette look. Always chill the dough to prevent spreading. Fun to make with kids and great for Halloween gifts!
