These Vegetarian Stuffed Mushrooms are filled with breadcrumbs, pine nuts, and cheese for a savory, crowd-pleasing appetizer.

- 8 medium mushrooms
- 1 tablespoon olive oil
- 1 small shallot, finely chopped
- Mushroom stems, finely chopped
- 30 g pine nuts
- 1 clove garlic, finely chopped
- 1 tablespoon fresh thyme, finely chopped
- 50 g breadcrumbs
- 50 g grated parmesan cheese
- 1 tablespoon parsley, finely chopped
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 40 g butter (cut into 8 small cubes)
- 50 g grated cheddar cheese
Instructions
- Preheat oven to 375°F (190°C).
- Clean mushrooms with a damp cloth. Remove and finely chop stems.
- In a skillet, heat olive oil and cook shallot until soft.
- Add pine nuts and chopped stems. Cook until nuts are toasted and stems softened.
- Add garlic, thyme, parsley, and breadcrumbs. Cook for 1 more minute.
- Remove from heat and stir in parmesan, salt, and pepper.
- Place mushroom caps on a baking sheet. Fill each with the mixture, top with butter cube and cheddar cheese.
- Bake for 15–20 minutes until cheese is golden and mushrooms are tender.
- Let cool slightly before serving.
Notes
Use firm, fresh mushrooms. Toast pine nuts before adding for more flavor. Chill filling between batches to prevent sogginess.
