- 1 pound ground beef (85% lean)
- 2 bell peppers (any color), sliced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 cups cooked rice (white, brown, or cauliflower rice)
- Salt and black pepper to taste
- 1 tablespoon olive oil
- Optional: red pepper flakes
Instructions
- Start cooking your rice using your preferred method.
- Slice bell peppers, dice the onion, and mince the garlic. Set aside.
- Heat a large skillet over medium-high heat. Add the ground beef and let it brown without stirring at first. Break it up and cook through. Remove and set aside.
- In the same pan, heat olive oil. Sauté onions and bell peppers for about 5 minutes, then add garlic and cook for 1 more minute, stirring constantly.
- Return the beef to the skillet. Stir in soy sauce, salt, pepper, and optional red pepper flakes. Let simmer for 2–3 minutes to blend flavors.
- Scoop rice into bowls and top with the beef and pepper mixture. Garnish with green onions, sesame seeds, avocado slices, or a fried egg if desired.
Notes
