- Meatballs: 1 pound ground beef or chicken
- 1/4 cup breadcrumbs
- 1/4 cup chopped green onions
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon brown sugar
- 1 teaspoon ground ginger
- Salt and pepper to taste
- Roasted Vegetables: 2 cups mixed vegetables (carrots, bell peppers, zucchini, etc.)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine ground beef (or chicken), breadcrumbs, green onions, garlic, soy sauce, sesame oil, brown sugar, ground ginger, and salt and pepper. Mix well and shape into 1-inch meatballs.
- Chop mixed vegetables and toss with olive oil, salt, and pepper. Spread on a baking sheet.
- Arrange the meatballs on the same baking sheet with the vegetables and bake for 25 minutes until meatballs are cooked through and veggies are tender.
- Serve meatballs with roasted vegetables, drizzle with extra soy sauce for added flavor.
Notes
Customize with your favorite veggies like sweet potatoes, broccoli, or cauliflower. Ground turkey or chicken can also be used for leaner meatballs.
