Description

A spooky, sweet-and-salty Halloween treat that’s easy, festive, and fun for the whole family. Chocolate bat cookies meet pretzels, candy, and a creamy peanut butter filling in this whimsical mix.


Ingredients

  • ½ cup butter, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • ½ teaspoon salt
  • 1 large egg
  • 1 teaspoon baking soda
  • ½ cup cocoa powder
  • 2 cups all-purpose flour
  • 1 tablespoon black food coloring gel or activated charcoal powder (optional)
  • ½ cup creamy peanut butter
  • 2 cups powdered sugar
  • 3–4 tablespoons heavy cream
  • 2 teaspoons maple extract or maple syrup
  • 3 cups mini pretzels
  • 1 cup candy corn or M&Ms (optional)
  • ½ cup chocolate chips or chunks
  • ½ cup roasted peanuts or almonds
  • Optional: edible googly eyes
  • Optional: Halloween-colored sprinkles

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. Beat butter and sugar until fluffy. Add vanilla, almond extract, salt, and egg. Mix well.
  3. In a separate bowl, whisk baking soda, cocoa powder, and flour. Combine with wet ingredients.
  4. Add black food coloring gel if using. Roll dough between parchment to ¼ inch thick.
  5. Cut out bat shapes and place on baking sheet. Bake 10–12 minutes and cool completely.
  6. Mix peanut butter, powdered sugar, cream, and maple extract until smooth and creamy.
  7. Spread filling on one bat cookie, top with another to make sandwich. Add googly eyes if using.
  8. In a large bowl, mix mini pretzels, chocolate chips, candy corn, and nuts.
  9. Gently fold in bat sandwich cookies. Sprinkle with Halloween sprinkles if desired.

Notes

Make cookies and pretzel mix ahead of time but store separately to keep crisp. Swap filling or candies to suit allergies or preferences.
