This Baked Feta recipe is a vibrant, Mediterranean-inspired appetizer made with creamy feta, roasted vegetables, and fragrant olive oil. It’s perfect for entertaining or easy weeknight snacking, all made in under 30 minutes in one dish.

- 6–8 oz feta cheese block
- ½ red bell pepper, sliced
- ½ yellow bell pepper, sliced
- ¼ red onion, thinly sliced
- 1 pint cherry tomatoes
- 3 garlic cloves, thinly sliced
- ½ cup mixed olives (kalamata and green)
- 1 lemon, divided
- ⅓ cup extra virgin olive oil
- 1 tsp oregano
- ½ tsp red chili flakes
- ¼ tsp salt
- ¼ tsp black pepper
- Fresh thyme or basil, for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, whisk together olive oil, juice from half a lemon, oregano, chili flakes, salt, and pepper.
- Place feta block in center of an oven-safe baking dish. Arrange tomatoes, peppers, onions, garlic, and lemon wedges around it.
- Drizzle olive oil mixture over everything and toss vegetables gently to coat.
- Bake for 25–30 minutes, until feta is soft and slightly golden and tomatoes are bursting.
- Remove from oven, discard tomato vines, and garnish with fresh herbs.
- Serve warm with crusty bread, crackers, or pita chips.
Notes
To prep ahead, assemble everything in the baking dish and refrigerate until ready to bake. Add a drizzle of honey during the last 5 minutes of baking for a sweet-savory twist. Best enjoyed hot while the feta is melty.
