- 2 pounds boneless, skinless chicken breasts
- 10 ounces grape tomatoes (or cherry tomatoes)
- 1 whole head of garlic
- 3 tablespoons extra virgin olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 8 ounces block feta cheese
- 2 tablespoons fresh basil, finely chopped (or parsley)
Instructions
- Preheat oven to 450°F (230°C).
- Place chicken breasts in a 9×13 baking dish. Scatter grape tomatoes and garlic cloves around them.
- Drizzle with olive oil. Sprinkle Italian seasoning, salt, and pepper. Toss to coat everything evenly.
- Nestle the block of feta cheese into the center of the dish.
- Bake uncovered for 30 minutes.
- Turn oven to broil and cook 5 more minutes until the top is golden.
- Remove from oven, cover loosely with foil, and let rest 5 minutes.
- Use a spoon to mash the feta, tomatoes, and garlic into a creamy sauce.
- Sprinkle with fresh basil and serve hot.
Notes
Always use block feta—it melts better and creates a creamy sauce. Don’t skip the broil for added flavor and texture. Let the dish rest before serving for juicier chicken and richer sauce.
