Description
Avocado pasta is fresh, creamy, filling, and surprisingly simple to make. Cooked pasta gets tossed in a smooth avocado sauce with olive oil, lemon, garlic, and a little seasoning, then finished with crispy bacon for a salty, smoky bite.

- 6 oz uncooked pasta, such as spaghetti, penne, or rigatoni
- 1 and a half ripe avocados, pit and skin removed
- 1 to 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 garlic cloves
- A pinch of cayenne pepper
- A pinch of onion powder
- Salt and pepper, to taste
- 3 strips cooked bacon, chopped into small pieces
Instructions
- Bring a pot of salted water to a boil.
- Cook the pasta until it reaches your preferred texture.
- Drain the pasta and set it aside without rinsing.
- Cook the bacon strips in a separate pan until crispy.
- Transfer the cooked bacon to a paper towel and chop into bite-sized pieces.
- Add the avocado, olive oil, lemon juice, garlic, cayenne pepper, onion powder, salt, and pepper to a blender or food processor.
- Blend on high until the sauce is completely smooth and creamy.
- Taste the sauce and adjust the seasoning as needed.
- Add a little more olive oil if you prefer a thinner consistency, then blend again.
- Combine the warm pasta, avocado sauce, and chopped bacon in a large bowl.
- Toss until the pasta is well coated.
- Serve immediately.
Notes
Use fully ripe avocados for the smoothest sauce. Serve right away because avocado sauce can brown as it sits. Reserve a little pasta water before draining if you want to loosen the sauce without thinning the flavor.
