- 2/3 cup unsalted butter (cold and diced into small pieces)
- 2 cups all-purpose flour
- 1 tsp salt
- 4 tbsp cold water
- 2 cups diced baking apples (peeled and finely diced)
- 1/4 cup white sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp ground allspice (freshly ground if you have it)
- 1 large egg (for egg wash)
- 1 tbsp water (for egg wash)
Instructions
- In a medium bowl, mix 2 cups of all-purpose flour with 1 tsp of salt.
- Add cold diced butter and use a pastry cutter to incorporate it into the flour until the mixture resembles small crumbs.
- Drizzle 4 tbsp of cold water over the mixture, toss with a fork, and knead gently until dough forms. Refrigerate for at least 30 minutes.
- Roll out the dough on a lightly floured surface to 1/6-inch thickness. Cut out 12 circles using a round cutter or small bowl.
- In a small bowl, toss 2 cups of diced apples with 1/4 cup sugar, 1/2 tsp cinnamon, and 1/4 tsp allspice.
- Spoon 1 tbsp of the apple filling onto each dough circle, brush the edges with egg wash, and fold over to seal. Press edges with a fork.
- Place pies on a parchment-lined baking sheet. Brush tops with egg wash, and cut 3 small slits on top of each pie.
- Bake at 425°F for 18-20 minutes until golden brown. Cool for 5 minutes before transferring to a wire rack.
