- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 2 tablespoons all-purpose flour
- 6 tablespoons salted butter, divided
- 3 medium yellow onions, thinly sliced
- 4 shallots, halved
- 2 cups apple cider
- 2 cups chicken broth (or dry white wine)
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons apple butter
- 1 pound baby potatoes
- ¼ cup fresh sage leaves
- 1 teaspoon garlic powder
- Flaky sea salt, to finish
Instructions
- Preheat oven to 325°F (165°C). Pat roast dry, season with salt and pepper, and dust lightly with flour.
- In a large Dutch oven, melt 1 tablespoon butter. Sauté onions for 5 minutes, add shallots and cook 5 more minutes. Deglaze with ½ cup apple cider.
- Stir in thyme. Nestle roast in the pot, spread apple butter over the top, and pour in remaining cider and broth.
- Add baby potatoes around the roast. Cover and roast for 2½ to 3 hours until beef is fork-tender.
- Increase oven to 425°F (220°C). Remove potatoes and spread on a baking sheet. Toss with butter, garlic powder, and sage. Roast 20–25 minutes until crispy. Sprinkle with flaky salt.
- Uncover roast and return to oven for 20–30 minutes to caramelize. Add cider if needed to prevent drying.
- Slice roast against the grain, spoon over juices and onions, and serve with crispy sage potatoes.
Notes
Make ahead for deeper flavor—leftovers reheat beautifully. For extra heartiness, add carrots or parsnips in the last 90 minutes. No apple butter? Use a mix of brown sugar and cider. Pair with crusty bread or a simple green salad.
